Wine is a drink that develops in time. There are many parameters such as : an appropriate room, optimal preserving conditions, proper storage that you have to consider. The following list is here to help you preserve your favourite wines.

  • Constant temperature of 10-15 °C
  • Good airing of the room
  • Obscurity (the best would be little or better no daylight)
  • Not too much humidity nor too dry (around 80%)
  • Storing sheltered from trembling ( roads, railways,...)
  • Avoid strong odours (storage of odorous products)
Nowadays it is difficult to fullfill these conditions in our new modern buildings without major expense.

The temperature fluctuation can be minimized by insulating the eventual heating conduits.
Light from the neighbours’ compartements can be reduced with opaque boards or fabric.

Covering the concrete with clay tiling or gravel improves the humidity of the air.


Storing bottles  

Even if screw tops or synthetics corks are now widespread on the market, a wine bottle should always be stored vertically. This is essential when you have natural corks so that the cork doesn’t dry out and you don’t have too much air penetrating. 

Wine storage shelves of various prices, materials, shapes are available from a number of manufacturers. With so much offer it is hard to make a choice. The stability of the shelving is important, it would be a sad to loose your best wines just because of a bad storage ! 

White and rosé wines should be stored at the bottom of the shelving where you find the lowest temperature. The reds can be stored higher in the shelves. It is handy to store your bottle with the label pointing up, so that you don’t have to turn the bottle each time you go in the cellar to choose a bottle of wine.

The assortment  

Your personal cellar should contain at least 2 to 3 white and red wines and three bottles per variety, this will allow you to know the potential ageing of your wines.
It is better to drink white wines young i.e. 1-3 years, whereas red wines improve with age.

The cellar book  

Having a cellar book is not essential but it can be useful when you have a lot of bottle in your personal cellar. It is a good idea to keep notes in your cellar book to record the developments in aroma, flavor and tannins of your wines.
